This kale salad is bold, delicious,sweet and just so darn delicious. We have been eating this salad for years including bringing it to family potlucks. We love to see peoples faces light up when they try their first bite. This salad works well during anytime of the year and that is what makes this recipe a bonafide winner in our book.
Kale is high in protein and iron. It contains high levels of vitamin A, C and K and works well in smoothies. Imagine a kale and mango smoothie, braised smokey kale with red beans and rice and this yummy kale salad.
The secret to this salad is what my wife calls the trilogy; lemon, pink salt and extra virgin olive oil. She uses them to massage the kale, changing the texture to an almost cooked version of kale without using the stove. To jazz up the salad we add mangoes and my favourite, sweet cranberries and some roasted pumpkin seed for some crunch.
8 cups of kale
2 tbs olive oil
1 tsp pink salt
3 tbs agave nectar
1/2 small red onion (chopped)
1/2 cup mango (chopped)
1/2 cup (toasted) pumpkin seeds
1/4 cup cranberries
How To Do It
Wash and dry kale and put into a bowl.
Add lemon juice, salt and olive oil.
Massage kale for 2 minutes until it is soft and reduced in volume. Mix in agave nectar, onion, mango, pumpkin seeds and cranberries.
